3 Styles of Nigerian Chicken Pepper

Nigerian cuisine consists of dishes or food items from the hundreds of ethnic groups that comprise Nigeria. Like other West African cuisines, it uses spices and herbs with palm or groundnut oil to create deeply flavored sauces and soups. Here are 3 different variations Nigerian Pepper Chicken.  Myself I do the Boil, I also remove the skin of the chicken then slightly fry with onions. I Try not to use much oil, or fat. Then I add altogether and stew.  Use the best way you desire, make some changes, these recipes are easy to follow.  And, taste Great

Nigerian Pepper Chicken   (Recipe 1)
10 chicken pieces
3 red bell pepper (Tatashe)

3 Scotch Bonnet chili peppers (Ata rodo)
2 onions
1 cup vegetable oil
2 cups chicken stock
vegetable oil (for Frying Chicken, Optional)
5 cloves garlic
1 inch ginger root
thyme
curry powder
5 curry leaves (Optional)
4 chicken (Knorr, cubes)
seasoning (I Tablespoon your preferred)

Nigerian Chicken Stew (Red Tomato Stew)
Spicy and aromatic Nigerian Chicken Stew made with roma tomatoes, red bell peppers, and seasoned chicken. A very classic and popular dish from Nigeria that can be eaten with many things.

1/8 cup vegetable oil 
3 pounds chicken cut in pieces
4 roma tomatoes, chopped
1 28 oz can whole peeled plum tomatoes
2 tbsp tomato paste
1 red bell pepper, chopped
2 habanero peppers
1 medium onion sliced
1½ teaspoon dried thyme
1 Tablespoon Nigerian red pepper (or Cameroonian red pepper)
1 teaspoon season salt
1 bay leaf
1 chicken bouillon cube
Salt and pepper to taste
1 cup of chicken stock
water as needed

For the Chicken
1 tablespoon Curry powder
1 tablespoon thyme
1 teaspoon garlic powder
